Heather Mills will be giving the people of Brighton a taste of what they can expect to see on the menu of the vegan café she's about to open, by demonstrating some of her own recipes at a 'Foodie Festival' on Saturday.

Paul McCartney's 41-year-old ex, who lives just north of Hastings, will get cooking alongside the likes of Mike Dodd - chef at DJ Norman Cook's Japanese restaurant Oki-Nami - and Sussex chef of the year Ben Goldsmith.

"Audience members will be able to chat to the chefs, so it should be an interesting preview of what she plans to do with her new venture. Not to mention a little insight into what Paul used to get for his tea," one local commented.

Meanwhile Heather has been revealing more details about her plans for the new restaurant. The mum-of-one, who bought the Big Fish Café in Hove in March for £140,000, has decided to rename the eatery V-Bites and is setting her sights on franchising it around the world, according to local paper Argus.

"Its going to be really funky, with nice music and ambience and good staff," Heather told the paper, adding each room will have a different feel. There'll also be a family crèche area where children can play with interactive screens teaching them about fruit and vegetables.

"I think the food is really going to surprise everyone," said the former model. "Most people's diet is 70 per cent vegan anyway… but they don’t associate the two."

"I am not telling people to stop eating meat and dairy altogether," explains Heather. "I'm just saying come and try it one day a week. Have a nice meal and do your bit for the environment."
