Heston and Hulstone get set for the Olympics

As the capital gears up for the impending Olympic and Paralympic Games, so do the country’s top chefs – and they’re aiming high.

Michelin-starred chef Heston Blumenthal has spent the past year mentoring rising culinary star Simon Hulstone. And now Simon has created menus inspired by the Games to be served to over three million British Airways customers during the event.

In a similar vein to what Heston has done with his Dinner restaurant and on his Feasts programme, Simon has taken inspiration from the airline’s menus going back to 1948 – the last date the Games were held in London. Dishes have popular ingredients from the period incorporated as well as twists for the modern-day audience. 

British Airways mentor Heston Blumenthal, said: "Simon has created an exciting, delicious and well-balanced menu that pays homage to the Games in a clever and subtle way. The dishes celebrate our rich history and British talent at its best. As a mentor, chef and friend I’m very proud of what he has achieved." Michelin-star chef Simon Hulstone said: "It’s an honour to have created a menu that millions of people will experience during the Games - I can’t think of a better platform to showcase British cuisine."  

Simon’s menu showcases dishes such as Rillette of Mackerel dressed on a pickled cucumber carpaccio with sourdough croutes, and Fish Pie with sustainably sourced hake, dressed with parmesan pomme puree and a warm tartare sauce. In honour of the Games, particular emphasis is on ingredients from London, including locally sourced salmon and sugar from East London. In keeping with the drinks list from 1948, a gin from London is also available on-board.
