Weight Watchers Delicious Dinners – lovely Lamb Rogan Josh with Lisa Faulkner

If you’re anything like me, you’ll always be on the look out for new and interesting ways to serve up healthy yet wholesome meals at dinner parties. I’ve teamed up with up with Weight Watchers®, to create healthier alternatives of some of the nation’s favorite home cooked dishes, and one of my favourites – a good old curry!

Your friends won’t want to leave! Now I’m sure lots of you will associate Indian dishes with a ‘naughty weekend treat’, but curries do not necessarily mean cream and fried foods. There are so many simple adaptations that can be made to reduce fat levels, without compromising on taste, and check out my video where I explain a few of my tips as I cook you up a tasty Lamb Rogan Josh.

Lamb Rogan Josh Recipe

Ingredients

5 spray(s) Cooking Spray, Calorie Controlled 2 medium Onion, All Types, thinly sliced 2 clove(s) Garlic, crushed 20 g Ginger, Root, 2cm (1 inch) piece peeled & grated (grated) 450 g Lamb, Boneless Leg Steak, Lean, Raw, cut into chunks 1 tablespoons Mixed Spice, (rogan josh powder) 1 can(s) Tomatoes, Whole or Chopped, Canned, chopped (large) 2 tablespoons Tomato Purèe (level) 1 cube(s) Stock Cube, Vegetable, chicken, made up with 150 ml hot water 1 pinch Salt 1 teaspoons Pepper, Black (Whole, Cracked or Ground), Freshly ground (ground) 1 teaspoons Coriander, Fresh, to garnish 1 teaspoons Oil, Olive 1 spray(s) Cooking Spray, Calorie Controlled 

Instructions 

Spray a large non-stick pan with low fat cooking spray. 

Heat, add onions and sauté for 3-4 minutes, until softened. 

Add garlic and ginger and cook for 30 seconds. 

Add lamb chunks and cook until browned – about 5 minutes. Stir in spice powder. 

Add tomatoes, tomato puree and stock. Simmer, partially covered, for 30 minutes, or until the meat is tender, adding more stock if needed. 

Season. Serve the lamb. Garnish with lime wedges and coriander sprigs We hope you enjoy this recipe, and remember to keep checking back as there’s more to come.
