Golden Globes menu revealed

Los Angeles chef Troy N. Thompson has revealed what celebrities such as like Reese Witherspoon and Benedict Cumberbatch will be eating on the evening of the 72nd annual Golden Globe Awards at the Beverly Hilton Hotel in California.On Sunday, 11 January, Californian farmers and their fresh produce will steal the spotlight as the stars tuck into locally-grown ingredients at Hollywood's highest profile dinner of the year.

The executive chef will prepare a healthy and modern take on the traditional Waldorf salad, which typically contains apples, celery, walnuts and lettuce, to start. "You have to be healthy there," explains the chef.He says that the vegetarian entrée, ricotta cannoli, contains "ricotta and basil, handmade pasta". "Then," adds the chef at the preview of the menu, "we just warm it up with a little Parmesan cheese on top, a little tomato sauce on top of that and fresh thinly sliced California vegetables."

A duo of filet mignon and slow-baked arctic char will be served to the 1,300 stars

For the main course the 1,300 celebrity guests will receive a duo of filet mignon and slow-baked arctic char accompanied by a potato croquette, an heirloom tomato salad and a black Tuscan kale chip for toppings. The chef tasked with the preparation of the star meal told People: "I feel like these dishes are a really nice way to showcase the fresh produce we always use here at the Beverly Hilton, and our great relationships with the farmers who grow it."

He added: "I'm excited to use this premier product on such a special occasion. "For dessert, the famous diners receive a trio of desserts featuring a slice of cassis lemon cheesecake, hazelnut dacquoise and salted caramel.

And of course the night wouldn't be complete without a signature cocktail. Fashion model Elettra Wiedemann created the Moët Sunset Starlet made with Moët & Chandon Rosé Impérial, Lillet, dry Curacao and orange bitters. A grand total of 1,500 mini champagne bottles will be served as the celebrities sashay along the red carpet, and 400 magnum bottles will adorn the tables.
